Simple side dishes made with fresh, local ingredients are the best. Of course I use frozen veggies sometimes, but when I can I love to buy fresh, especially during the summer. Beautiful tomatoes, squash, zucchini and green beans, all waiting to be picked up and turned into something beautiful.

That something beautiful doesn't have to be difficult. Take this roasted broccoli for example. Two ingredients, not including your pantry staples, is all it takes to make a delicious and healthy side dish for your family. TWO ingredients! And it's ready in no time at all.

Roasting fresh veggies is probably my favorite way to cook them. Roasting brings out the flavors, even caramelizing them, and softens the veggies at the same time. Give this delightful roasted broccoli a try and I promise you won't eat it any other way after that!

Simple Roasted Broccoli with Parmesan

Serves 4

Ingredients:
1 large head of fresh broccoli
3 Tbsp extra virgin olive oil
Salt and pepper
1/4 cup freshly grated Parmesan cheese

Preheat the oven to 400 degrees. While the oven is preheating, clean and prepare the broccoli. Cut the broccoli florets from the stalks, leaving about an inch of stalk attached. Discard the remaining stalks. 

Place the florets on a baking sheet in a single layer. Drizzle the olive oil over the broccoli and toss to coat all the pieces. Sprinkle generously with salt and pepper. Roast the broccoli for about 20 minutes, until crisp yet tender and slightly browned.

Remove the broccoli from the oven, immediately toss with the Parmesan cheese and serve.
