Chipotle Guacamole and {Absolutely Avocados} Review

I hope you all had a fabulous weekend and had a chance to celebrate Cinco de Mayo! We did indeed celebrate here, and I made quite the spread for dinner. I shared this on my Facebook page and Instagram but in case you missed it, here is what we feasted on:

If you're not familiar with Gaby, she is a fabulous blogger who runs What's Gaby Cooking. Her new cookbook, Absolutely Avocados, was released just a couple of weeks ago and it is perfect in every way. 



First off, I love avocados. Don't you? I mean, I thought everyone did. 

Second, Gaby is a brilliant writer and recipe developer. This cookbook includes 80 amazing avocado recipes. You can have avocados for breakfast, dinner, and even dessert. Brilliant I tell ya'!

Gaby included lots of guacamole recipes, but just looking at this charred corn guacamole makes me hungry. I'm looking forward to getting some fresh corn this summer and whipping it up!



The desserts in this cookbook are incredible! Avocado chocolate chip cookies? And these avocado brownies? Yes PLEASE!



So after carefully going through each page of my new cookbook and intently reading each recipe, along with Gaby's stories, I decided to make the chipotle guacamole and the carnitas for our Cinco de Mayo celebration. They were both delish! The chipotle pepper gives the guac a nice smoky kick. And those carnitas? To die for!! I am not kidding, the pork was moist and tender and delicious. You need to pick up Gaby's cookbook as soon as possible and try some of these recipes yourself.

Gaby was sweet enough to give me the OK to share her amazing chipotle guacamole recipe with you. It's so simple to make, you seriously won't believe it. Throw everything in your bowl, mash it together and voila! It's that easy. 


Chipotle Guacamole

Printable Recipe

Ingredients:
3 Hass avocados
1 Tbsp fresh lime juice 
1/3 cup fresh cilantro, finely chopped
1 chipotle pepper from a can of chipotles in adobo sauce, finely chopped
1 Tbsp adobo sauce
Coarse salt and fresh ground pepper to taste

Combine all the ingredients in a large bowl and mash with a fork until half smooth and half chunky. Taste and add more chipotle, lime or cilantro, if desired.
