Beef & Bean Burritos

I may have mentioned this before, but I love the Pioneer Woman. She is so down to earth, funny, and so stinkin' cute! I watch her shows, have both of her cookbooks and read her site just about every day. You could say I'm a little obsessed. 

Just a little bit.

Although I've had her cookbooks for some time, and read them more than once, I've only made a few of her recipes here and there. I don't know why, because everything in those books looks so delicious! 

Well the other day I had her second cookbook, Food From My Frontier, sitting out on the table and my oldest son picked it up. He started browsing through it, pointing at things and saying, "mom, why don't you make this? And this? And this?!" So I had him pick out a few recipes that he might like and I added everything to my shopping list for the week.

The first recipe I made last night was the beef and bean burritos. They are CRAZY easy to make. And oh lawd are they delicious! My oldest had a friend over so I fed three hungry boys these burritos and they literally devoured them. Even my youngest son, who is a picky eater! Well played PW, well played. It was a hit with everyone.



One quick note...I found the exact mexican tomato sauce that PW used, the El Pato brand, in the hispanic section of our Mejier grocery store. It seems to be a pretty common brand. Also, I apologize for the lack of pictures in this post. I was trying to get dinner on the table for the boys and wasn't thinking properly!

Beef & Bean Burritos

Ingredients:
2 lbs. ground beef
1/2 of a large onion, chopped
2 cans (7 oz.) mexican tomato sauce (El Pato brand if you can find it) or enchilada sauce
1/2 tsp ground cumin
1/4 tsp ground oregano
1/4 tsp chili powder
1/4 tsp salt
1 can refried beans
3/4 cups montery jack cheese, plus extra for topping your burritos
12 burrito-sized flour tortillas

In a large skillet over medium heat, cook the onion and ground beef until completely cooked. Add all of your seasonings and mix well to combine. Pour one can of the sauce into the meat and simmer over low heat for 5 minutes or so. (Add a little water if mixture gets too dry.)

Heat the refried beans in a saucepan. Add the cheese and stir until melted. Remove from the heat and keep warm.  Heat tortillas in the microwave for one minute.

Spread a small amount of beans on each tortilla. Add a couple scoops of meat. Fold over the ends of the tortilla, then roll up. Place two burritos on a microwave-safe plate. Open up your second can of tomato sauce and drizzle some over the top of the burritos, then sprinkle with more cheese. Microwave for one minute, or until cheese is melted and burritos are very hot. Serve immediately.

  2. I love Pioneer Woman also! I have not made these burritos yet, but I will have to give them a try! I just love reading her books - making her recipes too!
