Pumpkin Pie French Toast

This morning for Sunday breakfast I made Pumpkin Pie French Toast. I may have mentioned this before, but I LOVE pumpkin. That's one of my favorite things about Fall...cooking with pumpkin. The aroma that fills the air is just amazing. So today I decided to try out this french toast, which is an inspiration from my friend Erin over at 5 Dollar Dinners. Thanks Erin for this fantastic idea! I made just a couple of swaps in the recipe and it came out delish. It's a very simple recipe and I will definitely be making this again!

Ingredients:
10 slices Texas Toast style bread (Erin used 14 slices of whole wheat sandwich bread)
3 eggs
1/2 cup milk
3/4 cup canned pumpkin
1 tsp. pumpkin pie spice (Erin used homemade pumpkin pie spice and has the recipe on her site)
Butter and syrup for serving

Directions:
Set out the bread for dipping. In a medium bowl, whisk together the eggs, milk, pumpkin and pie spice until smooth. Dip each side of the bread in the mixture and cook on hot, greased griddle or skillet. Flip after 1-2 minutes. Once all are cooked, serve with butter and syrup. Enjoy this yummy treat for breakfast or for dinner!
