I'm a big fan of all kinds of peppers. Not anything that's super hot, but I can take a little heat. Peppers are good in so many dishes and I love eating them plain as well. Not too long ago I was at my favorite local sub shop and they asked if I wanted sweet peppers on my sub. Oddly enough, I had never eaten them on my sub before! I said yes, and I quickly fell in love with them. Sweet, sour, with a touch of heat, they are perfect.

I've been buying those sliced sweet peppers for my salads and sandwiches at home ever since, and found that I love the whole cherry peppers too. I decided to create a super simple appetizer with the whole peppers, perfect for the big game, parties, or even as a quick snack. They take just minutes to make, and everyone loves them!

I love that these Stuffed Cherry Peppers are made with just three ingredients - jarred whole cherry peppers, Genoa salami slices, and cubes of mozzarella cheese. Who knew that three ingredients could taste so delicious?

Stuffed Cherry Peppers

Ingredients:
12 jarred sweet cherry peppers
6 slices of Genoa salami, halved
12 cubes of mozzarella cheese

Stem and seed the cherry peppers and pat dry with a paper towel. Wrap the halved salami slices around cubes of mozzarella and gently stuff inside the peppers. Serve with toothpicks.
