5 Minute Fresh Tomato Salsa

Got 5 minutes? Then you've got plenty of time to prepare this fresh and delicious salsa!

It's summertime which means we all want to spend as much time as we can outdoors. We also want to keep cooking wonderful meals and snacks for our families, but who wants to spend all day in the kitchen?

Don't get me wrong, the kitchen is my favorite place to be! But in the summer I like to be enjoying the warmth and sun outside, because living in Michigan I know it won't last long.

Fresh fruits and veggies are in abundance during the summer months so it's not hard to whip up some fabulous dishes with everything we have on hand. This 5 minutes fresh tomato salsa is just that. Fabulous. It may not even take a full five minutes to make! Get your fresh veggies, throw them into the food processor and viola. Fresh salsa! 

See? I told you it was easy.

5 Minute Fresh Tomato Salsa

Ingredients:
4 Roma tomatoes, quartered
1 jalapeno pepper, stemmed, seeded and cut into quarters
1 cup roughly chopped onion
1/4 cup fresh cilantro
Salt and pepper to taste

Add all of the vegetables and the cilantro to the bowl of a food processor. Add a pinch of salt and pepper. Process on low until you get the desired consistency for your salsa. (If you like it chunkier, pulse a few times; if you want it thinner, process longer)

Taste for seasoning and add more salt and pepper if needed. Serve with tortilla chips.
