A few weeks ago I got a beautiful head of cauliflower in my weekly organics delivery box. (I use Door to Door Organics here in Michigan and I LOVE it!) I rarely cook with cauliflower and honestly I wasn't quite sure what I was going to make at first.
I let the cauliflower sit in the frig for a few days and then out the blue the idea just came to me. I would roast that cauliflower and make it into a soup! I have to say, the end result was amazing. I used beef broth in my base and it made the soup so rich and extra flavorful. You could easily make this a vegetarian dish by substituting vegetable broth for the beef broth though.
This really is a hearty soup and the sourdough Parmesan croutons give it a little something special. I ended up eating this soup just about every day for lunch all week long and it seemed to taste better each day! I hope you enjoy it as much as I did.
