I know what you're thinking, ice cream for breakfast? YES! Yes my friends, we are treating ourselves to ice cream for breakfast. And not just plain ole' ice cream, we are making decadent ice cream breakfast parfaits! With layers of overnight oats, ice cream and fruit, these parfaits will definitely jump start your day in the best way.

These ice cream breakfast parfaits were inspired by Hudsonville Ice Cream's two brand new, Limited Edition breakfast-themed flavors  - Crispy Cocoa Cereal - rich brown butter ice cream mixed with a thick fudge ripple and chocolate covered rice cereal - and Peanut Butter & Jelly - creamy vanilla ice cream combined with thick ribbons of peanut butter, peanut brittle pieces and a sweet strawberry jam swirl. Seriously, how amazing do these sound?

The first time I tried these flavors, my inner kid was jumping for joy! Crispy Cocoa Cereal reminds me of my childhood, sitting on the floor in my living room on a Saturday morning eating cereal and watching cartoons. {Scooby-Doo was definitely my favorite!} And who doesn't love a PB&J sandwich? I still enjoy one for lunch every now and then.

After trying these amazing new flavors, I just knew an ice cream breakfast parfait would be the best way to celebrate their launch. Plus, Ice Cream For Breakfast Day is coming up soon so I had to get ready for that too!

Ice Cream Breakfast Parfaits

Ingredients:

For the oats:

• 1 cup old-fashioned rolled oats
• 1 cup milk
• 1/2 cup vanilla yogurt
• 1 Tablespoon chia seeds
• Pinch of salt

For the parfaits:

• 1 cup Hudsonville Cocoa Crispy Cereal Ice Cream and/or 1 cup Hudsonville Peanut Butter & Jelly Ice Cream
• Sliced strawberries and bananas
• Peanut butter chips and cocoa crispy cereal, for topping

How to cook Ice Cream Breakfast Parfaits

1. To make the oats, place the ingredients into a large bowl and mix well. Cover the bowl tightly with a lid or saran wrap and place in the refrigerator overnight.
2. To assemble the parfaits:
3. For the Cocoa Crispy Cereal parfait, spoon a quarter of the oats into the bottom of two glasses. Top each with a scoop of ice cream, then add sliced bananas. Add another quarter of the oats and another scoop of ice cream, then sprinkle with cocoa crispy cereal.
4. For the Peanut Butter & Jelly parfait, spoon a quarter of the oats into the bottom of two glasses. Top each with a scoop of ice cream, then add sliced strawberries. Add another quarter of the oats and another scoop of ice cream, then sprinkle with peanut butter chips.
