We've had this discussion before, but you know that I know that you know how busy our weeknights are. Did you follow me there? I think I may have actually lost myself HAHA. But you get my point. We are all busy during the week, and we all appreciate coming home to a delicious home cooked meal after a long day. Now that doesn't mean we have to spend hours in the kitchen cooking this meal, especially when you see how quick and easy these Skillet Chicken Burrito Bowls are to make.

This dish is my take on the Red Gold® slow cooker version of chicken burrito bowls. Using shredded rotisserie chicken saves a ton of time and everything cooks in one pan in about 15 minutes. I take another shortcut by using precooked rice that just needs to be warmed up for a few minutes in the microwave. Dinner can be on the table in less than 30 minutes!

Mini Spinach Artichoke Pies

These bite-sized Mini Spinach Artichoke Pies couldn't be easier to make! These delicious
appetizers are perfect for game day, the holidays, or just as a treat for your family and friends.
I think it's fair to say that I'm obsessed with spinach and artichoke dip. There's just something about that warm, cheesy, gooey and flavorful dip that I just can't get enough of. I order it often as an appetizer when we go out to eat, and I occasionally make it at home. Even my kids, who don't really like spinach or artichokes alone, gobble it up. I call that a win for getting them to eat those veggies! One of my other favorite treats are spinach pies. What's not to love about all that goodness tucked inside cripsy phyllo dough? YUM is all I can say.

Pumpkin Swirl Brownies

I love to pumpkin everything this time of year. And of course I love chocolate. It just made sense to create something delicious that combined two of my favorite things, so today I give you Pumpkin Swirl Brownies! Thick, fudgey, chocolaty brownies have a rich and creamy pumpkin spice swirl running through them. Perfect for Halloween parties, potlucks, or just for the family.

Growing up my mom used to buy me frozen French bread pizzas as a treat. You know the ones I'm talking about, right? I've even bought them for my own kids from time to time. Please tell me I'm not alone! They make a quick and easy meal when you're short on time and they're delicious. Not too long ago though, I realized that making homemade French bread pizza is SO much better than buying ones from the store. They couldn't be easier to make, can be ready in just about 15 minutes, and bake on one sheet pan! It's the perfect weeknight meal for the family.

Halloween is definitely one of my most favorite holidays. From the decorations to the costumes, haunted houses and corn mazes, it’s a time of the year that my whole family enjoys. Usually I can hardly wait until October 1st to pull out my decorations, and I’ve been known to start putting things up a week or so before that. It’s just a fun time to celebrate! My boys are grown up now, but I loved dressing them up when they were little. Some of my favorite pictures of them are from Halloween, dressed up as Buzz Lightyear, Winnie the Pooh, a lion, a fireman…the list goes on. Now I’m getting all nostalgic!

I also love the food this time of year. It’s fun to make spooky snacks and treats, but I’m a bit obsessed with baking all kinds of good things. From decorated cupcakes and orange frosted brownies, I enjoy making a lot of different desserts and sharing them with friends and family.

Not only is fall my favorite season, but it also happens to be the busiest time of the year for my family. Between school and sports, it seems like we are always on the go or in a rush.  I still cook dinner for my family most nights, which means I need to create meals with real flavor, real fast, and make sure it's something my family will enjoy.  I've come to rely on using Smithfield Marinated Fresh Pork to create quick and delicious meals because it's so versatile and can be cooked in a variety of ways.

Growing up my mom used to buy these delicious little turnovers from the store for a special treat on the weekends. She served them for breakfast and I remember how excited I would get when I knew we were having them. Sometimes they were cherry filled, other times they were apple. No matter what the variety, they were always delicious!

It wasn't until I grew up and started baking that I realized I could make these delicious treats at home. Of course you can make your own homemade dough, but I love using Pepperidge Farm® Puff Pastry Sheets. They are perfect for so many things, like Chicken Pot Pie with Puff Pastry Crust, or this Gruyere & Campari Tomato Tart. But I especially love using them in sweet recipes.

Although it's just the beginning of October, the holidays will  be here before we know it. Don't shoot the messenger, I'm just speaking the truth! You know how they always creep up on us quickly and one day you wake up and realize it's already November and you think, how did that happen? That's how I feel about this whole year. It seems like just yesterday we started 2016. It seems like summer just started. And here we are, already at October.

I'm already thinking ahead to the holidays and the food I will be cooking. I'm getting my side dishes planned and of course focusing on desserts. You know those are my favorite! My family has had a tradition ever since my boys were little that my parents spend the night with us on Christmas Eve. We go to mass on Christmas Eve then come home and have a huge spread of appetizers as our dinner. It's so much fun! On Christmas morning we wake up and immediately start opening gifts but we like to take turns opening them, one by one, so that it lasts longer and we can really treasure everything we receive. Of course when we are done we are all starved and ready for breakfast, so I like to have everything planned out ahead of time so it doesn't take too long.

Everyone knows I love pasta, and you should know by now that also I love quick and easy meals. With how busy we are {and I know you are too} it's a relief to have a dinner recipe that is simple, healthy and delicious to feed my family any weeknight. With that being said, I'm celebrating National Pasta Month, or as my friends over at Dreamfields Pasta call it, #HealthyPastaMonth, by sharing this amazing Pesto-Herbed Angel Hair and Peas

All month long Dreamfields is featuring pasta recipes focused on a different theme, and this weeks' theme is “Go Green." My Pesto-Herbed Angel Hair and Peas fits in with that theme perfectly, don't you think?

Guten Tag! {That means good day in German!} I'm really excited to be celebrating Oktoberfest with my #SundaySupper family today. Being of German heritage, I loved learning all about Oktoberfest and how it came about. Oktoberfest is the world's largest beer festival and is held annually in Munich, Bavaria, Germany. It's a 16- to 18-day folk festival running from mid or late September to the first weekend in October, with more than 6 million people from around the world attending the event every year.  The Oktoberfest is an important part of Bavarian culture, having been held since 1810. Other cities across the world also hold Oktoberfest celebrations that are modeled after the original Munich event.

Buffalo Chicken Dip

Just 5 ingredients and 30 minutes is all you need to make this warm and cheesy Buffalo Chicken Dip!
It's the perfect appetizer for your next tailgate or game day party!
Buffalo Chicken Dip | The Chef Next Door
My kids absolutely love buffalo chicken wings. Me, not so much. I like the flavor, just not the mess that comes along with eating them. It never fails that I have sauce all over my face, my hands and sometimes, my clothes. I'm a hot mess! I recently started making an amazing Buffalo Chicken Dip that has all the flavors of those beloved chicken wings, it's just a bit cleaner and easier to eat at a tailgate or party.
