I've been visiting my local farmers market quite regularly lately and am loving all the beautiful produce coming in. From bright green asparagus to colorful zucchini and of course, gorgeous fruit, it's like paradise to me. I literally could spend hours walking through and looking at every single thing. Just ask my kids, they'll tell you exactly how long I'm there.

One of my absolute favorite things right now is fresh berries. Strawberries, blueberries, raspberries, I love them all. And luckily, so do my kids! Whether I'm making a fruit salad or baking them into a scrumptious dessert, I'm always happy to have berries around.

These Berry Breakfast Flatbreads are my newest creation. Sweet cinnamon cream cheese is spread onto a flatbread, topped with a beautiful berry mixture, then dusted with just a bit of powdered sugar. It's almost too pretty to eat. Almost, not quite though. One bite of this deliciousness and you can't stop.

I went a little heavy on the berries for these flatbreads so a fork and knife were definitely needed. You could ease up on the berries and cut it into slices like a pizza, or just pile on the berries and use that fork. I don't think one can ever have enough berries, don't you agree? 

Berry Breakfast Flatbreads

Serves 4

Ingredients:
4 flatbreads
1/4 cup sugar
1 Tablespoon cornstarch
1/4 teaspoon salt
1/2 cup water
3 cups assorted fresh berries 
8 ounces cream cheese, softened
1 teaspoon pure vanilla extract
2 teaspoons ground cinnamon
Powdered sugar for topping, if desired

Preheat the oven to 350 degrees. Place the flatbreads on a baking sheet.

In a medium saucepan combine the sugar, cornstarch, salt, and water and whisk well. Gently add one cup of the berries. Cook over medium heat until the sauce is thickened stirring occasionally. Remove the pan from the heat and add an additional one cup of berries. Stir to combine. 

In a small bowl mix the cream cheese, vanilla and cinnamon until smooth. 

Place the flatbreads in the oven for 10 minutes. Cool for just a few minutes, then spread the flatbreads with the cream cheese mixture. Spoon the berry mixture over the cream cheese mixture. Top with a few of the remaining fresh berries and dust with powdered sugar, if desired.
