Happy Thursday, friends! I hope you've been enjoying #BrunchWeek so far. You didn't get a new brunch recipe from me yesterday but don't fret, I've still got two new ones coming your way this week. This Apple & Grape Breakfast Salad is one of my new favorite dishes. It's so simple, yet it's light and creamy and packed with flavor. It's perfect to serve at brunch, but also great for busy weekday mornings. You can make the dish ahead of time and eat it for the next few days. It gives me a great boost of energy and brightens my mood too!

This fruit salad is made with my favorite Lady Alice apples. They are crisp and sweet and hold up very well to the creamy dressing. 
The dreamy dressing is made with cream cheese, yogurt and honey, and I gave it a special touch by adding a little pure lemon extract. The extract brightens up the dressing and adds just a touch of lemony flavor, a perfect paring for the apples and grapes. Chopped pecans are sprinkled on top to give it a little crunch.

Apple & Grape Breakfast Salad

Makes 6-8 servings

Ingredients:
ounces cream cheese, softened
cup plain Greek yogurt
1/4 cup honey
3 cups halved red seedless grapes
Rainier Fruit Lady Alice Apples, cored and diced 
1 cup chopped pecans 

In a large bowl, beat the cream cheese with an electric mixer until creamy. Add the yogurt, honey, and lemon extract and beat until smooth. Add the grapes and apples and gently toss to coat. Pour the salad into a serving bowl and top with the chopped pecans.
