We're already on Day 5 of our 12 Days of Christmas Cookies extravaganza and today I'm bringing you my second recipe! These Spritz Cookies are a family favorite. They are light and crunchy and not overly sweet. Perfect for gift giving, bringing to holiday parties, or just for your family. (Santa loves them, too!)

These Spritz Cookies are crisp and buttery and have a rich vanilla flavor. Just a few simple ingredients and a cookie press are all you need to make these Christmas classics!
What I love about these cookies is how easy they are to make. You start with a very simple dough and use a cookie press to create your favorite designs. The press comes with several disks so you can make these cookies all year long, even for different holidays, so they aren't just for Christmas. Add sprinkles or decorative candies before you bake the cookies.

Spritz Cookies

Makes approx. 4 dozen cookies

Ingredients:
1 cup (2 sticks) unsalted butter, at room temperature 
1/2 cup sugar
1 egg
1 teaspoon pure vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or a silicone mat and set aside.

In the bowl of a stand mixer, beat the butter and sugar together until light and fluffy. Add the egg and vanilla and mix until combined. In a small bowl whisk together the flour, baking powder, and salt. Add the dry ingredients to the mixer, a little at a time, beating until just combined.

Place the dough in a cookie press and form shapes on the prepared baking sheet. Bake 5 to 6 minutes, or until the cookies are set but not brown. Immediately remove the cookies from the sheet and place on a wire rack to cool completely. Repeat the process with the remaining dough.
