Strawberry Mint Sushi Pillows

Our Blogger Recipe Challenge group was fortunate enough to experiment with a brand new product this month! Have you ever made sushi at home? Or wanted to? RiceWrap Foods sent us all their Slice of Rice, designed for home chefs as a “roll your own” product. Slice of Rice is convenient and easy of use, and is vegan, gluten free and certified kosher.


Since March is Dessert month for the group, I knew I wanted to try and make a dessert sushi. I know it may sound odd, but it was SO good. The Slice of Rice is perfectly seasoned and paired well with the strawberries and mint. Oh and did I mention there is Dulce de Leche on top? Yum!

Now I've never made sushi at home, and I quickly found that I am not good at the whole rolling aspect. I mean, I kinda failed. It was definitely an issue with me, not the rice, but I just couldn't get it to roll the way I wanted it to! So I decided instead of rolls to make sushi pillows. They really did turn out cute and tasted fabulous. Check out the simple recipe below and try it out yourself!


Strawberry Mint Sushi Pillows

Ingredients:
1 sheet Slice of Rice RiceWraps, at room temperature
3 fresh strawberries, quartered
8 small mint leaves
Dulce de Leche, for drizzling

Carefully cut your Slice of Rice into 8 squares. Place a few small strawberries on top of each piece of rice, followed by a mint leaf. Drizzle a bit of the Dulce de Leche over the top.
