Orange Vanilla Mini French Toast

I'm not a huge breakfast eater during the week. I know, I know, it's the most important meal of the day. But I just can't eat much first thing in the morning. So sometimes I'll have yogurt and granola, sometimes cereal. Occasionally I'll make eggs. But that's about as far as it goes on a weekday. 

Even though I'm not a big fan of it during the week, I absolutely love making breakfast on the weekends! Making a batch of homemade pancakes or waffles and serving it with some bacon or sausage makes not only me happy, but my kids too.

I don't use mixes at all anymore. I found it is super simple to whip up homemade waffle and pancake batter myself versus buying the boxed stuff, and I think it tastes better. And I always have those ingredients on hand. Simple!

Another favorite of ours is homemade french toast. Last weekend I decided to change up my usual basic recipe and I made orange vanilla mini french toast. It was delicious. Just a hint of orange mixed with the vanilla was so fresh. It's a great combination! And I loved the bread I used too. I bought a loaf of Italian bread at the store bakery which came pre-sliced. The pieces were small, almost like a baguette rather than your full size bread slices. It was perfect!

Orange Vanilla Mini French Toast

Ingredients:
4 eggs
1 cup of milk
2 Tbsp sugar
2 tsp pure vanilla extract
Zest of half a large orange
Pinch of salt
16 pieces of sliced Italian bread, from your favorite bakery 
Butter for frying


In a shallow bowl beat together the eggs, milk, sugar, vanilla, orange zest and salt. Dip the bread slices into the egg mixture, soaking for just a few seconds and coating both sides.

Heat a large skillet or griddle over medium heat and melt 1 Tbsp butter. Add as many bread slices as you can to your griddle and cook for about 5 minutes or until golden brown, turning once. Wipe off your griddle, add another Tbsp of butter and repeat with remaining bread slices until all have been cooked. Serve with warm maple syrup and powdered sugar. And, of course, your favorite breakfast meat!
